Ingredients:
½ cup Lentils (red gram dhal – Masoor dal)
1 cup mixed vegetables (onion. Potato, okra, eggplant, green bell pepper)
Green chilies
Ginger (1/2 inch)
Sambhar powder
Turmeric powder
Tamarind
Cilantro
Salt to taste
For tempering:
Oil
Mustard seeds
Asafetida powder
Fenugreek seeds
Cumin seeds
A few curry leaves
1 red chili
Preparation:
Cook the dal in a pressure cooker and set aside.
Soak tamarind in 1 cup of water and extract juice
Heat oil and add all the ingredients for tempering. When the mustard seeds splutter, add the sliced green chilies and chopped vegetables and fry for a couple minutes.
Add the tamarind juice, water, salt, turmeric, and Sambhar powder. Close with lid and simmer on low heat until vegetables are tender.
Add the cooked dal and simmer for five more minutes until everything blends.
Garnish with chopped coriander leaves.
