Ingredients:
1 Medium/Large Onion
2 tsp Ginger Garlic Paste (You can get this at the Indian store)
2 tbsp. Meat Masala (also in the Indian Store)
2-3 tomatoes (fresh) or use 1 can of diced rotel tomatoes
2 lbs Beef or Chicken
Frozen Fresh Shredded Coconut (can get it in the freezer section of Publix; need to defrost in microwave to thaw)
Preparation:
Dice and fry onions in a 2-3 tbsps vegetable oil until translucent.
Add Ginger Garlic Paste and fry for an additional 5 minutes.
Add 2 heaped tablespoons of Meat Masala and tomatoes and keep frying until the tomatoes are a mush.
Add diced meat and fry for an additional 5-10 minutes.
Add a little water and salt to taste and allow cooking until meat is tender.
Cook until the water dries out and add the fresh coconut flakes.
