Ingredients:
50 g Gelatin (I used the Knorr brand – the Davis Brand was recommended)
700 g sugar (finely granulated)
12 oz. water
1 tsp vanilla essence
Lime juice (1/2 to 1 lime based on taste preference)
1 tsp cornstarch (extra for rolling)
Food colors (optional)
Preparation:
Soak gelatin in 4 oz. of water.
Mix sugar with the rest of the water (8 oz). Stir on full flame.
When it boils add gelatin mixture and stir immediately to avoid it burning.
Add lime juice mixed with cornflour. Allow to boil for 3 minutes.
Remove from flame. Let it cool for a just a little time.
Optional: Separate into two or more parts and add a different color to each as desired.
Beat each part with electric beater (mixer) until fluffy and the color changes to a pastel shade.
Pour the first part into a greased tray dusted with cornstarch.
Beat the second part as before and layer over the first part on tray.
Repeat if more than two layers are desired.
Cool the tray in the fridge for about two hours.
Cut into desired shapes with a sharp knife. Wipe the knife with a damp cloth every time/ as needed while cutting.
