Ingredients:
50 gms gelatine (use the Davis Brand if possible)
700 gms fine sugar
12 ounces water
1 tsp vanilla essence
Juice of 1/2 or 1 lime depending on taste
1 tsp cornflour
More cornflour for rolling
Preparation:
Soak gelatine in 4 ounces water.
Mix sugar with balance 8 ounces water.
Add vanilla essence
Stir on full flame.
When it boils add gelatine mixture and stir immediately to avoid it burning.
Add lime juice mixed with cornflour.
Allow to boil for 3 minutes. Take down from fire.
Let it cool for a just a little time.
Beat with electric beaters and pour in greased tray.
You can divide the quantity in two separate bowls if you want two coloured marshmallows. Can do 4 layers -looks good for presentation but a bit more tedious.
Keep in the fridge for a couple of hours
Cut with a sharp knife into desired shapes. You may need to wipe the knife with a damp cloth every time while cutting.
