Ingredients:
For Soup:
Frozen Sweet Corn
1 can of sweet corn cream style
1 can of chicken breast or 1-2 cooked shredded fresh chicken breasts
Chicken broth or chicken bouillon cubes
2-3 tbsp cornflour
2 whole lightly beaten eggs
pepper powder to taste
salt to taste
For Chili Sauce:
8-10 green chillies (Serrano peppers) diced very fine
soy sauce
vinegar
Preparation:
Method for Sauce:
Put the diced green chillies in a little vinegar and add some soy sauce. Make just before making the soup.
Method for Soup:
Simmer stock or water with bouillon cubes. Add sweet corn cream style, frozen corn and shredded chicken, salt, pepper and bring to a boil.
Mix corn flour in a little room temperature water and add to the boiling soup stirring constantly. Allow to boil.
Slowly with constant stirring add the beaten eggs.
